INGREDIENTS:

1 medium sized roasting chicken (approx. 3 lb 10 oz)
1/2 lb seedless white grapes
1/2 pint chicken stock
2 oz butter
2 wine glasses Stone's Original Ginger Wine
Juice of 1 lemon
Pinch of dried thyme
Freshly ground pepper
1 oz flour
1 oz brown sugar

Cut the chicken into quarters and gently fry in butter until golden. Remove these
and place in casserole dish with grapes, the stock, Stone's Original Ginger Wine and lemon juice.
Season well and add thyme.
Cook in a moderate oven at 180 C|350 F|Gas Mark 4, for about 1 1/4 hours. Take out of oven and
remove chicken joints from dish and place on flat part of grill pan. Sprinkle with brown
sugar and place under grill until sugar melts. Meanwhile thicken gravy with flour.
Place chicken quarters onto serving dish and pour thickened gravy over.
Serves 4.
